Earthworms are the moles primary food source. Having laid a new lawn and by keeping the ground moist makes this an attractive proposition for the mole.
The mole or moles firstly establish their centre run and then will branch out with several smaller runs. The mole has a fantastic sense of both hearing and smell, which helps them detect the earthworms as and when they drop into their tunnels, becoming their next meal.
